Buffalo Chicken Recipe Wings
Buffalo Chicken Recipe Wings Ingredients:
Buffalo wings (known simply as wings in much of the Northeastern United States, especially in areas around Buffalo), are unbreaded chicken wing sections (called flats and drums), deep fried, and coated in a cayenne pepper-based sauce with other seasonings.
INGREDIENTS:
2 pounds broiler-fryer chicken wings
1 egg
1 cup cooking oil
2 cups cider vinegar
1 teaspoon salt
1/2 teaspoon cayenne pepper to taste
1/8 teaspoon garlic powder
1/8 teaspoon nutmeg
1/8 teaspoon celery salt
dash coriander
dash ground cloves
celery sticks
Creamy Blue Cheese Dipping Sauce: recipe follows
PREPARATION:
In medium bowl, beat 1 egg; add 1 cup of oil and beat again. Add your other ingredients, vinegar, salt, pepper, cayenne, garlic powder, nutmeg, celery salt, coriander and cloves; mix well. Cut chicken wings in half at the joint; remove wing tips and save for later use (soup stock). Dip your wing drummettes into the sauce and place into shallow roasting pan. Bake for 10 minutes at 500°F., keep turning and basting the chicken wings with sauce several times until wings reach desired crispness. Take out of oven, drain and remove to warm platter garnished with celery sticks. Serve with Creamy Blue Cheese Dipping Sauce.
Blue Cheese Dipping Sauce
1/2 cup whip cream (125ml)
1/2 cup dairy sour cream (125ml)
1/2 cup crumbled blue cheese (125ml)
2 cloves garlic minced
2 tablespoons lemon juice (30ml)
2 tablespoons finely chopped shallots (30ml)
2 tablespoons chives chopped (30ml)
salt and pepper to taste
Directions:
Blue Cheese Dipping Sauce
In a food processor combine sour cream, whip cream, shallots, garlic, lemon juice, salt and pepper pulse using on and off turns until evenly combined. Add the blue cheese and pulse until evenly combined about 2-3 times. Remove from processor and stir in chopped chives.
Serve chilled with wings or garden vegetables.
